WINEMAKING
Convento San Francisco Selección Especial 2020 is made from a selection of small parcels of old vine Tempranillo within the Ribera del Duero DO.
The parcels were harvested between the 30th of September and the 1st of October 2020, by hand into small 15KG crates, upon arrival at the winery they passed over a strict double selection table for both the whole bunches and individual grapes. Fermentation and maceration took place in a small temperature controlled stainless steel tank for 22 days with daily manual stirring and breaking of the cap. Aged for 30 months in 225L Bordeaux barrels of fine grain French oak.
A Wine that we made just 3,573 bottles of 750ml and 96 Magnum (1500ml.)
CLIMATE
The 2020 Vintage we will remember for the rest of our lives, as the COVID Pandemic arrived as we were carrying out the dry pruning. The abundant rainfall in Spring made it difficult to carry out the very necessary work of the green harvest in the vineyards. A year of lots of hard work on the land, hoeing by hand to take out the weeds in our organic vineyards. The ripening in September was cold and slow, we waited patiently and harvested perfectly mature grapes in October.
Great wines from 2020, after much effort and hard work in a very complicated year.
