WINEMAKING
Convento San Francisco La Zapatera 2020 comes from a single vineyard of ours located in the village of Fuentenebro, Burgos. Being 2 Hectares of vineyard planted in 1920 & 1940 of Tempranillo, Albillo Mayor & other varieties. It is located at 920 metres above sea level on terraces surrounded by aromatic wild herbs and plants. The soil is red clay with quartz stones.
We hand harvested “La Zapatera” the 5th of October of 2020 into small 15kg crates. Double selection tables upon arrival at the winery, first for the bunches and then the for the grapes. Fermented & macerated in a small temperature controlled tank for 31 days, with manual stirring of the lees daily. Aged for 30 months in small 225L Bordeaux barrels of French Oak.
A wine that gives you a unique aroma and taste profile, showing the authentic typicality of a truly historic vineyard.
From this vintage we produced just 2,905 bottles (75cl) and 96 Magnum (150cl).
CLIMATE
The 2020 Vintage we will remember for the rest of our lives, as the COVID Pandemic arrived as we were carrying out the dry pruning. The abundant rainfall in Spring made it difficult to carry out the very necessary work of the green harvest in the vineyards. A year of lots of hard work on the land, hoeing by hand to take out the weeds in our organic vineyards. The ripening in September was cold and slow, we waited patiently and harvested perfectly mature grapes in October.
Great wines from 2020, after much effort and hard work in a very complicated year.
